I love being able to cook meals with big holiday flavor without all the fuss and time it takes to make a traditional holiday meal. This crockpot cranberry pork recipe is one of our family favorites. I can make something really special even on a weekday. I just toss the three simple ingredients in the crockpot and let them cook all day. By the time everyone is ready for dinner, so is this yummy pork roast. I just cook up some hot rice with it and serve it with a big green salad.

I’ve also made this Christmas Eve before. I just doubled the recipe and used a large crockpot. You just can’t beat slowcooker recipesanytime you are busy, and especially around the holidays. They basically cook themselves and there’s just one big pot to clean up after. You can even buy special liners for your crockpot that you can pull out and toss at the end of the meal. I don’t use them very often though. Instead I spray my cooker with non-stick spray before adding any of the ingredients. Any food or sauce that gets stuck on the pot comes off pretty easily when it’s time to scrub.
